Edesia 2026, sponsored by FCI Constructors, is bringing the spirit of Brazil to the Colorado Wine Country Inn, and the Wine Pairing Dinner on Saturday, March 28 is set to be one of the most unforgettable evenings of the year. Inspired by this year’s theme, Carnaval in the Vineyards, Executive Chef Chad Griffith has crafted a five-course Brazilian-inspired menu designed to pair beautifully with wines from some of the Grand Valley’s most respected wineries.
Guests will begin the evening with a Bem-vindo Coquetel, a classic caipirinha featuring muddled lime, sugar, and cachaça, before settling in for a culinary journey through Brazil’s vibrant flavors. Courses include lamb esfiha, traditional feijoada with pork and black beans, fresh seasonal salad with chicken croquette, a churrasco-style beef picanha entrée, and a decadent tapioca dessert with coconut cream, guava syrup, and dulce de leche.
Each course is thoughtfully paired with local wines generously donated by Varaison Vineyards, Colorado Cellars, Centennial Cellars, Restoration Vineyards, Whitewater Hill Vineyards, and Grande River Vineyards, whose support helps make this event, and its impact, possible. Their contributions directly benefit PrimeHealth+, Mesa County’s community health center, which provides comprehensive medical and dental care to anyone who needs it, regardless of insurance or income.
